Taktouka with peppers

Ingredients:
3 green or colored bell peppers (cut into slices or cubes)
2 tomatoes (chopped)
1 medium onion (chopped)
2 garlic cloves (minced)
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon cumin
Salt to taste
Black pepper to taste
A pinch of chili powder (optional)
Instructions:
Prepare the ingredients:
Cut the peppers, tomatoes, and onion, and mince the garlic.
Heat the oil:
In a deep pan, heat the olive oil over medium heat.
Sauté the onion:
Add the chopped onion to the pan and sauté until golden and translucent.
Add garlic and peppers:
Add the minced garlic and sauté with the onion for about a minute until fragrant.
Then, add the chopped peppers and sauté for 5 minutes until they soften.
Add the tomatoes:
Stir in the chopped tomatoes.
Add paprika, cumin, salt, black pepper, and a pinch of chili powder if you like some heat.
Cook:
Cover the pan and let the mixture simmer on low heat for 10-15 minutes until the tomatoes have broken down and the flavors have blended well.
Final touch:
Once the taktouka has thickened and the ingredients are well combined, remove from heat.
Serve:
Serve the taktouka hot with fresh bread or as a side dish.
Tips:
You can drizzle a bit of olive oil on top before serving for extra flavor.
Taktouka can be served as a main dish or a side.
