Taktouka with peppers

  • Ingredients:


  • 3 green or colored bell peppers (cut into slices or cubes)

  • 2 tomatoes (chopped)

  • 1 medium onion (chopped)

  • 2 garlic cloves (minced)

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

  • Salt to taste

  • Black pepper to taste

  • A pinch of chili powder (optional)

  • Instructions:


  • Prepare the ingredients:

    • Cut the peppers, tomatoes, and onion, and mince the garlic.

  • Heat the oil:

    • In a deep pan, heat the olive oil over medium heat.

  • Sauté the onion:

    • Add the chopped onion to the pan and sauté until golden and translucent.

  • Add garlic and peppers:

    • Add the minced garlic and sauté with the onion for about a minute until fragrant.

    • Then, add the chopped peppers and sauté for 5 minutes until they soften.

  • Add the tomatoes:

    • Stir in the chopped tomatoes.

    • Add paprika, cumin, salt, black pepper, and a pinch of chili powder if you like some heat.

  • Cook:

    • Cover the pan and let the mixture simmer on low heat for 10-15 minutes until the tomatoes have broken down and the flavors have blended well.

  • Final touch:

    • Once the taktouka has thickened and the ingredients are well combined, remove from heat.

  • Serve:

    • Serve the taktouka hot with fresh bread or as a side dish.


  • Tips:

  • You can drizzle a bit of olive oil on top before serving for extra flavor.

  • Taktouka can be served as a main dish or a side.
