Moroccan Salad

Ingredients:
2 large tomatoes, diced
1 cucumber, diced
1 green or red bell pepper, diced
Half a small red onion, finely chopped
2 tablespoons of chopped parsley
2 tablespoons of chopped cilantro
Juice of half a lemon
2 tablespoons olive oil
Salt and black pepper to taste
A pinch of cumin (optional)
Steps:
Prepare the ingredients:
Wash the tomatoes, cucumber, and bell pepper, then dice them into small cubes.
Finely chop the red onion, parsley, and cilantro.
Mix the ingredients:
In a large bowl, combine the diced tomatoes, cucumber, bell pepper, and chopped onion.
Add the chopped parsley and cilantro.
Make the dressing:
In a small bowl, mix the lemon juice with olive oil.
Add salt, black pepper, and a pinch of cumin (if using) to the dressing.
Assemble the salad:
Pour the dressing over the salad mixture and toss everything together until well combined.
Serve the salad chilled. You can let it sit in the fridge for 10-15 minutes before serving to enhance the flavors.
Tip:
You can also garnish the salad with some sliced olives or grated carrots for extra color and flavor.
