Moroccan Salad

Traditional Moroccan salad with tomatoes, cucumbers, peppers and fresh herbs, dressed with olive oil and lemon juice.

Ingredients:

  • 2 large tomatoes, diced

  • 1 cucumber, diced

  • 1 green or red bell pepper, diced

  • Half a small red onion, finely chopped

  • 2 tablespoons of chopped parsley

  • 2 tablespoons of chopped cilantro

  • Juice of half a lemon

  • 2 tablespoons olive oil

  • Salt and black pepper to taste

  • A pinch of cumin (optional)

Steps:

  1. Prepare the ingredients:

    • Wash the tomatoes, cucumber, and bell pepper, then dice them into small cubes.

    • Finely chop the red onion, parsley, and cilantro.

  2. Mix the ingredients:

    • In a large bowl, combine the diced tomatoes, cucumber, bell pepper, and chopped onion.

    • Add the chopped parsley and cilantro.

  3. Make the dressing:

    • In a small bowl, mix the lemon juice with olive oil.

    • Add salt, black pepper, and a pinch of cumin (if using) to the dressing.

  4. Assemble the salad:

    • Pour the dressing over the salad mixture and toss everything together until well combined.

    • Serve the salad chilled. You can let it sit in the fridge for 10-15 minutes before serving to enhance the flavors.

Tip:

You can also garnish the salad with some sliced olives or grated carrots for extra color and flavor.
