Cajun Shrimp and Sausage Pasta Recipe

Ingredients:

For the pasta:

  • 12 oz (340g) fettuccine or pasta of choice

  • 1 lb (450g) large shrimp, peeled and deveined

  • 8 oz (225g) spicy chicken sausage, sliced

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small red onion, diced

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 tsp Cajun seasoning

  • 1 tsp paprika

  • 1 tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • 1 cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.

  2. Season the shrimp with Cajun seasoning, paprika, salt, and pepper.

  3. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  4. Cook the shrimp for 2-3 minutes per side until pink and opaque. Remove and set aside.

  5. In the same skillet, add another tbsp of olive oil and cook the sliced chicken sausage until golden brown (about 3-4 minutes). Remove and set aside.

  6. Sauté the vegetables in the same skillet. Add the bell peppers, onion, and garlic. Cook for 4-5 minutes until softened.

  7. Pour in the chicken broth and heavy cream, stirring to combine.

  8. Bring the mixture to a gentle simmer and cook for 3-4 minutes until the sauce thickens slightly.

  9. Add the Parmesan cheese, stirring until melted and creamy. If the sauce is too thick, add a bit more broth.

  10. Return the shrimp and sausage to the skillet, stirring to coat them in the creamy sauce. Let them heat through for 1-2 minutes.

  11. Toss the cooked pasta into the skillet, mixing everything together.

  12. Adjust seasoning with more salt, pepper, or Cajun seasoning if desired.

  13. Garnish with fresh parsley and extra Parmesan before serving.
